Recipes for Ashura you never knew existed
People consider Ashura as a day of sorrow due to the tragic events of Karbala.
But what many people may not know is that apart from fasting, offering prayers and reciting the Quran, Sunni Muslims cook special food items on the day of Ashura, where some items are district-exclusive.
While corresponding with cooks and housewives who know what the items were and how to cook them, they told that the recipes were cooked to express empathy with hard time of martyrs of Karbala. These meals are viewed as being attributed to special and holy.
Ingredients: Rice-1kg, Cholar Daal (Lentils)-250 gm, Garam Masala (it includes cinnamon, cumin, cloves, cardamom and black pepper,), salt, green chili, sugar, ginger 1 tea spoon, 2 onion (sliced) , soya bean oil 1 table spoon
Wash and rinse them in water rice and drain both rice cholar dal, heat oil in the cooker and fry the whole spices till they become aromatic - cinnamon, cardamom, cloves, bay leaf and cumin.
The cumin should also crackle when frying the spices, now add the blended ginger. Stir and saute for a minute, add the drained dal rice and stir well. Then pour water and add salt & sugar than add meat. Stir and cook on medium flame, after half an hour open the lid of the cooker. Serve the Khichuri with beef, chicken curry, rohom (desert).
Ingredients: Polao Rice 1kg, sugar 500gram, milk, water.
Mix the polao rice and sugar and grind it well. Then put water in a pan and add milk and cardamom, cinnamon and tej pata (bay leaf). After boiling the water, add grinded rice and sugar. Then stir and cook on medium flame until the Rohom is thick.
Sottar Danar Bhat (Bhuna Khichuri with all lentils, beans)
Ingredients: Chinigura rice, Sottar Dana(mixed all lentils, beans), Gorom Masala (it includes cinnamon, cumin, cloves, cardamom and black pepper,), salt, green chili, ginger 1 tea spoon, turmeric power, onion, oil.
Rinse rice and lentils together. Drain the water. In a saucepan heat theoil, put in all ingredients and fry for few minutes. Add hot water, cover and cook for 20–25 minutes.
Serve the Khichuri with dried spicy beef, chicken curry and salad.
Dried spicy beef
Ingredients: 1kg beef meat, 6-7 cloves of garlic, 2 tablespoon chili powder, Gorom Masala (it includes cinnamon, cumin, cloves, cardamom and black pepper) Mustard oil, salt, oil
Clean well beef, slice thinly. Mix all other the ingredients. Use hands to add this mixture spices on each sliced beef. Put the spicy beef into pan and cook with large heat in 3 minutes. Reduce the heat and continue cooking in 20 – 25 minutes.
